Crunchy Cabbage Salad

This Crunchy Cabbage Salad combines shredded purple cabbage, grated carrot, green onion, and fresh cilantro for a vibrant vegetable mix with a crisp texture. A creamy sesame ginger dressing made from rice vinegar, soy sauce, honey, tahini, toasted sesame oil, garlic, and fresh ginger adds a balanced tangy and slightly sweet flavor. The addition of peanuts introduces a nutty crunch that complements the fresh vegetables, making this salad refreshing and flavorful.

Description

The Crunchy Cabbage Salad features shredded purple cabbage as its main ingredient, providing a firm, crunchy base. Grated carrots and sliced green onions add sweetness and sharpness, while fresh cilantro leaves contribute brightness and herbaceous notes. Tossed with a dressing made by blending neutral oil, rice vinegar, soy sauce, honey, tahini, toasted sesame oil, minced garlic, and freshly grated ginger, the salad is coated with a smooth, creamy sauce that balances acidity, sweetness, and umami. Peanuts sprinkled in the salad add texture and a toasty element.

The interplay of crunchy vegetables with the creamy, tangy dressing makes this salad versatile—it can serve as a side dish or a light lunch component. It is best served immediately to preserve the crispness of the cabbage and freshness of the ingredients.
