Crunchy Granola Bars

Crunchy Granola Bars combine toasted oats and puffed rice cereal with maple syrup, coconut oil, and whey protein powder for a satisfying texture and flavor. Dried cranberries and mini chocolate chips add bursts of sweetness and chewiness. The bars are baked twice—first to toast the oats, then after pressing the mixture—yielding a firm, crunchy consistency. These bars make a practical homemade snack you can portion easily and customize with preferred add-ins.

Description

Crunchy Granola Bars are made by toasting oats with salt and coconut oil, which enhances their nutty flavor and crispness. When combined with puffed rice cereal, the mixture achieves a light and crunchy texture. Maple syrup, vanilla whey protein powder, and vanilla extract bind the ingredients and add depth of flavor. Dried cranberries bring a tart contrast, while mini chocolate chips contribute additional sweetness and slight softness.

The mixture is pressed firmly into a sheet pan lined with foil and baked to set. Cutting the bars while warm helps produce clean edges and prevents crumbling. This method produces bars that are crunchy but hold together well, ideal for a grab-and-go snack or a lunchbox treat.

Being homemade, you can adjust the add-ins like nuts or seeds as desired. The recipe notes recommend a standard sheet pan with a lip to achieve the right thickness and texture; smaller pans tend to produce chewier bars. Overall, these bars combine wholesome ingredients with a firm crunch and sweet accents for a balanced snack option.

Ingredients

Servings
  • 5 cups oats
  • 3 cups puffed rice cereal
  • ½ cup coconut oil melted
  • 2 coops vanilla whey protein powder
  • 1 cup maple syrup
  • 3 tsp vanilla
  • 1 tsp salt
  • ½ cup dried cranberries
  • ¼ cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F
  2. In a large bowl mix the salt, oats, and oil. Pour onto a baking sheet and bake until toasted, about 15 minutes stirring every couple of minutes.
  3. While the oats are baking, stir together the syrup, whey, and vanilla until the whey is dissolved.
  4. Mix the oats, puffed rice, cranberries, and syrup mixture together.
  5. Line a sheet pan with foil and spray with oil. Pour the mixture into the pan and press firmly. Add a layer of wax paper over the top before you press to keep your hands clean. The sheet pan should be a standard size ideally with a lip. If you have a smaller sheet pan you’ll probably end up with chewy bars.
  6. Bake for 10-15 minutes and remove from oven. Cut into 24 bars while still warm.
