Crustless Asparagus Quiche
Description
This quiche starts by sautéing onions, asparagus, and sliced mushrooms in butter and olive oil until softened and lightly tender. Fresh thyme is added for aromatic depth. Beaten eggs are mixed with grated Jarlsberg cheese, fresh thyme, kosher salt, black pepper, white pepper, and a pinch of nutmeg, creating a richly flavored custard base. The sautéed vegetables are folded in, then the mixture is poured into a greased pie dish and baked at 350°F. The quiche bakes for about 30 minutes until the center is firm, and edges develop a golden-brown hue.
The final dish has a creamy, soft texture punctuated by tender vegetable pieces with a mild savory profile from the cheese and spices. It’s a versatile dish suitable for breakfast, brunch, or a light dinner, served warm or at room temperature.
If a standard 9-inch pie dish is used instead of a deep one, extra filling may be baked separately in ramekins. This quiche is quite flexible with the vegetable ingredients and cheese.
Ingredients
- 1 small onion chopped
- 2 cups asparagus trimmed and cut into 1" pieces. (about 8 ounces
- 1 cup mushroom sliced
- 1 teaspoon thyme chopped, fresh
- 1 1/2 cups egg beaten. (About 5-6 eggs, large
- 2 cups Jarlsberg cheese grated. (About 8 ounces
- 1 Tablespoon olive oil
- 1 Tablespoon butter unsalted
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper ground
- pinch white pepper
- pinch nutmeg
Instructions
- Heat oven to 350 degrees F. Grease a 9" deep pie dish.
- In a saute pan, over a medium heat, melt butter and olive oil. Add onions and saute 3-4 minutes, until soft and translucent.
- Add asparagus and mushrooms and continue cooking an additional 3-5 minutes or until asparagus is crisp tender and mushrooms are soft. Set aside.
- In a large bowl, beat eggs. Add cheese, fresh thyme and seasonings. Fold in sauteed vegetables.
- Pour into greased baking dish. Bake for 30 minutes, or until center is firm and edges are golden brown. Let cool slightly to set before serving.
Notes
- If you lack a deep pie dish, use a standard 9" pie dish and bake any excess filling in small ramekins alongside the main quiche.
