Crustless Ham and Zucchini Quiche

This crustless ham and zucchini quiche recipe is a great way to use up leftover ham  and feed a crowd easily! It can be served at room temperature so you can easily make it ahead of time.

Ingredients

  • 4 eggs
  • 2 cups milk
  • 3/4 cup flour white or whole wheat will work
  • 1 teaspoon baking powder
  • 1 cup ham diced
  • 2 cups zucchini grated (from about 2 medium zucchini)
  • 8 oz. cheddar cheese grated
  • 1 pinch kosher salt
  • 1 pinch black pepper

Instructions

  1. Preheat oven to 350 degrees F and grease a quiche, pie, or casserole dish.
  2. Add a pinch of salt to the grated zucchini and let sit for a few minutes. Then, squeeze as much water out of it as possible by wringing it in a clean kitchen towel or paper towel.
  3. In a large bowl, whisk together the 4 eggs, milk (2 cups), flour (3/4 cup), and baking powder (1 teaspoon) until well combined.
  4. Stir in the remaining ingredients, including a little bit of salt and pepper (but not too much, since the ham and cheese are already salty).
  5. Pour batter into prepared baking dish and use a spatula or wooden spoon to distribute the batter evenly in the pan.
  6. Place the quiche on top of a foil-lined baking sheet, in case it spills over (it will be very full) and to make it easier to remove from the oven.
  7. Bake at 350 degrees F for 45 minutes, or until the top is golden brown and quiche is fully cooked through (if you shake it a little, it shouldn't jiggle).
  8. Allow to cool for at least 10 minutes before cutting into it. Can be served warm or at room temperature.
