Cucumber Margarita
Description
This margarita begins by pureeing peeled cucumber and straining the juice to remove pulp, resulting in a smooth, lightly vegetal base. The cucumber juice is combined with tequila, triple sec, lime juice, and agave nectar, which adds sweetness to offset the tartness of the lime. The glass rim is coated with kosher salt to complement the drink’s bright flavors and enhance each sip.
The beverage is served over ice, keeping it crisp and cold. The fresh cucumber flavor provides a subtle freshness uncommon in classic margaritas, making this version distinct. It pairs well with spicy foods or as a cooling aperitif.
Optional variations include muddling jalapeño for heat or mint for extra herbal brightness. Freezing the mixture with ice produces a frozen margarita variation for warmer days.
Ingredients
For one drink
- ½ cucumber peeled and diced
- ½ ounce tequila (1 tbsp)
- ½ ounce triple sec (1 tbsp)
- ½ ounce lime juice (1 tbsp)
- 2 teaspoons agave nectar (or simple syrup)
- lime for rimming glass, wedges
- kosher salt for rimming glass
- ice for serving, cubes
For a pitcher of drinks (5 total)
- 2 cucumber peeled and diced
- 2 ½ ounces tequila (¼ cup + 1 tbsp)
- 2 ½ ounces triple sec (¼ cup + 1 tbsp)
- 2 ½ ounces lime juice ¼ cup + 1 tbsp
- 2 tablespoons agave nectar (or simple syrup)
- lime for rimming glasses, wedges
- kosher salt for rimming glasses
- ice for serving, cubes
Instructions
- Add the cucumbers to a large blender and puree until smooth and completely blended. Pour the juice through a fine mesh strainer and into a bowl or measuring cup to separate the pulp from the juice.
- Add the cucumber juice, tequila, triple sec, lime juice, and agave nectar to a pitcher or glass. Stir to combine. Taste and add more sweetener if desired.
- Run a lime wedge around the rim of a glass. Dip the edge of the glass in salt and fill halfway with ice.
- Pour the cucumber margarita into the prepared glass and serve.
Notes
- For a spicy twist, muddle fresh jalapeño slices into the drink to release a mild heat.
- Add fresh mint leaves during muddling for a more refreshing flavor profile.
- Make a frozen version by blending all ingredients with ice until smooth.
