  • 6 cucumber or 1 English cucumber, mini
  • 1/4 or a large sweet onion
  • 3 Tablespoons white vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon red wine vinegar
  • salt freshly ground
  • black pepper freshly ground

Instructions

  1. Cut the cucumbers into thin slices. Slice the wedge of sweet onion into very thin slices. Place in a large bowl.
  2. In a small bowl combine the vinegar, sugar, red wine vinegar, salt and pepper. Taste the dressing--it's easy to adapt it if you want it to be a little sweeter or more tangy.
  3. Pour dressing over veggies and toss to combine. For best results, allow the mixture to marinate for at least an hour before serving.

Notes

  • The salad can be made in advance and chilled for 1-2 days to enhance flavor.
  • Additions like tomato, basil, avocado, or watermelon and feta provide delicious variations.
