Ingredients
- 2 cups cooked shrimp, chopped
- 2 cups diced cucumber, English or Persian cucumbers preferred
- 1 cup diced red bell pepper
- 1 jalapeño, seeds removed and minced
- 2 tablespoons chopped flat leaf parsley
- 1 tablespoon chopped fresh mint
- 2 tablespoons fresh lemon juice
- 1 tablespoon olive oil
- Kosher salt and fresh ground black pepper to taste
Instructions
- Add all of the ingredients to a serving bowl, stir together until combined and coated in the lemon juice and olive oil. Taste for seasoning and serve.
