Curried Carrots with Tandoori Sauce Recipe
Description
The Curried Carrots with Tandoori Sauce Recipe features carrots cut into thick pieces, grilled until crisp-tender and marked by a slight char. They are then mixed with a tandoori-style sauce combining yogurt, lemon juice, honey, ginger, garlic, and a blend of warm spices such as paprika, coriander, turmeric, curry powder, chili powder, and cumin. This cooling yet spiced yogurt sauce coats the carrots evenly, lifting their natural sweetness. Toasted almonds and raisins add crunchy and chewy textures, while fresh cilantro offers a bright herbaceous finish.
The grilling process lends a smoky depth to the carrots, contrasting with the tangy and lightly sweet sauce. This recipe is suitable for serving as a vibrant vegetable side dish or as part of a vegetarian spread. It pairs well with grilled meats or can be enjoyed on its own for a flavorful snack.
While the recipe recommends grilling, the notes include instructions for pan-cooking the carrots in oil over medium heat until crisp-tender as an alternative. This flexibility enables year-round preparation regardless of outdoor grilling availability.
Ingredients
Tandoori Sauce
- ¼ cup yogurt
- 2 tablespoons lemon juice
- 2 tablespoons honey or sugar
- 1 teaspoon ginger finely grated
- ¼ teaspoon Coriander
- ¼ teaspoon sweet paprika
- ¼ teaspoon salt
- ⅛ teaspoon cumin
- ⅛ teaspoon Turmeric
- ⅛ teaspoon curry powder
- ⅛ teaspoon chili powder
- 1 clove garlic very finely minced
Grilled Carrots
- 1 lb carrot
- 1 tablespoon neutral cooking oil generic cooking oil
- ¼ cup almonds slivered
- ¼ cup raisins
- 2 tablespoons cilantro chopped
Instructions
- Preheat your grill to medium heat and oil the grill. (See notes for making this recipe in a pan.) Mix all the tandoori sauce ingredients together in a large bowl then set it aside on your counter while you prep the rest of the recipe.
- Cut the carrots so they are about 2 ½ inches long and ¾ inch thick and toss them with oil. Grill the carrots for 10 minutes, or until they are crisp-tender and have several grill marks on them.
- Place grilled carrots into the bowl with the tandoori sauce then add the almonds, raisins, and cilantro. Mix well then serve right away.
Notes
- This recipe works well cooked on an outdoor BBQ grill, a grill pan, or an indoor grill depending on the season.
- To prepare without a grill, sauté the carrots in a pan with a little oil over medium heat until they are crisp-tender.
