Curried Carrots with Tandoori Sauce Recipe

Curried Carrots with Tandoori Sauce blends grilled carrots tossed in a creamy, spiced yogurt-based tandoori sauce enhanced with almonds, raisins, and fresh cilantro. The carrots are grilled until tender yet crisp, picking up smoky grill marks that complement the tangy and mildly spiced sauce. The addition of almonds and raisins adds contrasting textures and subtle sweetness, making this dish a flavorful side or light vegetarian option.

Description

The Curried Carrots with Tandoori Sauce Recipe features carrots cut into thick pieces, grilled until crisp-tender and marked by a slight char. They are then mixed with a tandoori-style sauce combining yogurt, lemon juice, honey, ginger, garlic, and a blend of warm spices such as paprika, coriander, turmeric, curry powder, chili powder, and cumin. This cooling yet spiced yogurt sauce coats the carrots evenly, lifting their natural sweetness. Toasted almonds and raisins add crunchy and chewy textures, while fresh cilantro offers a bright herbaceous finish.

The grilling process lends a smoky depth to the carrots, contrasting with the tangy and lightly sweet sauce. This recipe is suitable for serving as a vibrant vegetable side dish or as part of a vegetarian spread. It pairs well with grilled meats or can be enjoyed on its own for a flavorful snack.

While the recipe recommends grilling, the notes include instructions for pan-cooking the carrots in oil over medium heat until crisp-tender as an alternative. This flexibility enables year-round preparation regardless of outdoor grilling availability.
