Curried Chickpeas with Spinach

Curried Chickpeas with Spinach combines sautéed onions, garlic, and fresh ginger with curry powder, spinach, chickpeas, and tomato sauce to make a hearty, spiced vegetable dish. The spinach adds freshness and tender texture, while the chickpeas provide a satisfying, creamy bite. Adding a bit of water helps wilt fresh spinach evenly, integrating the flavors in a simple skillet-cooked meal often served over rice or with bread.

Description

Curried Chickpeas with Spinach features a base of diced onion, garlic, and grated ginger, gently sautéed before curry powder is added to release its aroma. Fresh or frozen spinach is then incorporated, steamed with a little water, which softens and blends the flavors. Chickpeas and tomato sauce are mixed in last, simmered to combine the spices and ingredients. This method ensures a balance of savory and warm curry notes with the freshness of spinach.

The dish offers a tender texture from the wilted greens and a creamy quality from the chickpeas, making it suitable as a vegetarian main or side. It can be enjoyed over a bed of rice or accompanied by bread to soak up the sauce.

The recipe’s straightforward steps require only basic kitchen techniques and pantry staples, making it accessible for those wanting a flavorful plant-based dish. Using fresh spinach requires the brief addition of water to wilt it properly, while frozen spinach eliminates that step.

Ingredients

Servings
  • 2 Tbsp olive oil $0.44
  • 1 yellow onion $0.70
  • 2 cloves garlic $0.08
  • 1 inch ginger $0.16, fresh
  • 1 1/2 Tbsp curry powder $0.45
  • 8 oz. spinach $1.04, fresh or frozen
  • 1 oz. can tomato sauce $1.06
  • 2 oz. cans chickpeas $1.88

Instructions

  1. Dice the onion, mince the garlic, and grate the ginger on a small holed cheese grater. Sauté the onion, garlic, and ginger in a large skillet with the olive oil over medium heat until the onions have softened (3-5 minutes).
  2. Add the curry powder and continue to sauté with the onion mixture for one minute more. Add about 1/4 cup of water to the skillet along with the fresh spinach and continue to sauté until the spinach has wilted. The water will help steam and wilt the spinach (no water needed if using frozen spinach).
  3. Drain and rinse the chickpeas. Add them to the skillet along with the tomato sauce. Stir well to distribute the spices in the sauce and heat through (5 minutes). Serve over rice or with bread.
