Curried Coconut Chicken

Ingredients

  • 1 1/2 pounds chicken breast cut into 1/2-inch chunks, boneless skinless; or chicken thighs
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste
  • 1 1/2 tablespoons olive oil
  • 2 tablespoons curry powder
  • 1/2 onion diced
  • 2 cloves garlic crushed
  • 1 coconut milk 14 ounce can
  • 1 diced tomatoes 14.5 ounce can
  • 1 tomato sauce 8 ounce can
  • 1 1/2 tablespoons sugar
  • rice for serving

Instructions

  1. Season the chicken with salt and pepper.
  2. Heat the oil in a saute pan over medium-high heat. Add the curry powder and cook for 2 minutes. Stir in the onions and cook until they start to soften, 2-3 minutes. Add in the garlic and cook for 1 minute. add the chicken and stir to coat with the curry oil. Reduce the heat to medium and cook until the chicken is cooked through, 7-10 minutes.
  3. Pour in the coconut milk, tomatoes, tomato sauce and sugar. Simmer, stirring occasionally, for 30-45 minutes.
