Ingredients

  • 12 ounces rice noodles
  • 1 tablespoon vegetable oil
  • 3 cloves garlic minced
  • 1 onion thinly sliced, medium
  • 4 teaspoons ginger grated, fresh
  • 3 tablespoons red curry paste
  • 1 1/2 teaspoons cornstarch
  • 1 ounce can coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 red bell pepper thinly sliced
  • 1 carrot julienned
  • 1 1/2 tablespoons lime juice freshly squeezed
  • 1/4 cup cilantro chopped, fresh

Instructions

  1. Cook the rice noodles according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the garlic, onion, and ginger, sautéing until fragrant.
  3. Stir in the red curry paste and cook for 1 minute. Mix cornstarch into coconut milk until smooth.
  4. Pour in the coconut milk, soy sauce, and maple syrup, and bring the mixture to a simmer. Cook for 5 minutes, or until slightly thickened.
  5. Add the cooked noodles to the skillet along with the red bell pepper and carrot. Toss everything together and cook for an additional 3 to 5 minutes. Remove from the heat, then stir in the lime juice and cilantro. Serve hot.
