  • 1 kg (2lbs) cauliflower Stems trimmed from florets.
  • 3 tbsp canola oil
  • 1 tbsp garam masala
  • ½ tsp chili flakes or red pepper flakes
  • ½ tsp ground cardamom
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

  1. Preheat the oven to 200°C/390°F.
  2. Place the trimmed florets and stems into a large bowl.
  3. Pour over the oil then add the spices. Toss to coat the cauliflower in the spices.
  4. Spray a large sheet pan with cooking spray. Transfer the cauliflower to the sheet pan and distribute so that the cauliflower is in a single layer.
  5. Place in the preheated oven and allow to roast for 30-45 minutes or until the cauliflower is fork tender and caramelized around the edges.
  6. Remove from the oven and serve.
