Dairy Free Blackberry Cobbler

Dairy Free Blackberry Cobbler combines a tart blackberry filling sweetened and brightened with lemon with a tender, oat-studded topping made from flour, oats, coconut oil, egg, and almond milk. The topping bakes to a golden crust sprinkled with turbinado sugar, complementing the warm berry mixture beneath. This dairy-free dessert balances textures and flavors for a wholesome finish.

Description

Dairy Free Blackberry Cobbler features blackberries mixed with granulated sugar, lemon juice, and zest to enhance the fruit's natural tartness. The filling rests while the topping is prepared to allow the flavors to meld.

The cobbler topping combines flour, oats, sugar, baking powder, and salt, then is mixed with melted coconut oil, egg, and almond milk to form a soft batter. Dollops of this batter are placed over the blackberry mixture in a prepared baking dish and sprinkled with turbinado sugar for added crunch.

Baked at a high temperature until golden brown, the topping forms a crisp but tender crust above the juicy blackberry filling. Served warm, it pairs well with dairy-free ice cream to maintain the dairy-free aspect while adding creamy contrast.

Adjust the sugar in the filling according to blackberry ripeness, as tart berries may need extra sweetness to balance the flavor.
