Dairy Free Brownies
Description
This Dairy Free Brownies recipe starts by melting coconut oil with dairy-free chocolate chips to create a smooth chocolate base. The eggs and light brown sugar are beaten until frothy before incorporating the chocolate mixture, cocoa powder, vanilla, and tapioca flour. The batter can optionally include extra chocolate chips for added richness.
The batter is poured into a parchment-lined square pan and baked at 350°F until the center is just set, which typically takes 20 to 24 minutes. Baking to a barely set center ensures a gooey, fudgy texture once cooled.
Allowing the brownies to cool fully before slicing is important, as they continue to firm up and develop their texture. Variations in packing the brown sugar or melting the chocolate thoroughly affect the final consistency and sweetness. Using coconut sugar is an alternative to brown sugar.
Ingredients
- ½ cup coconut oil melted
- 1 cup chocolate chips dairy free
- 1 cup light brown sugar lightly packed
- 2 egg
- 2 tbsp cocoa powder
- 1 tsp vanilla extract
- ¼ cup tapioca flour or cornstarch
- ¼ cup chocolate chips optional, dairy free
Instructions
- First, preheat oven to 350 degrees Fahrenheit. Line an 8 inch by 8 inch square pan with parchment paper.
- Add melted coconut oil and 1 cup chocolate chips to a bowl. Stir until chocolate chips have completely melted.
- In the bowl of a stand mixer, add light brown sugar and eggs. Beat for 2 to 3 minutes or until light and frothy.
- Then, pour melted chocolate mixture into bowl. Stir to combine.
- Add in cocoa powder, vanilla extract and tapioca flour. Stir to combine.
- Then, stir in extra chocolate chips if desired.
- Pour batter into lined baking pan.
- Bake for 20 to 24 minutes or until the middle of the brownies is barely set.
- Finally, remove from oven. Allow brownies to cool fully before slicing.
Notes
- Ensure coconut oil and chocolate chips are fully melted together into a smooth mixture; reheat briefly if needed.
- Lightly pack brown sugar to measure and consider coconut sugar as a substitute.
- Beat eggs and brown sugar together 2 to 3 minutes until frothy for better texture.
- Baking 20 minutes yields extra gooey brownies; do not overbake.
- Cool brownies completely before slicing to allow them to set properly.
