This surprisingly simple Dairy Free Shrimp Scampi recipe can be made with under 10 ingredients in 30 minutes. It’s a super flavorful dish that’s fancy enough for a special meal but fast enough for a busy weeknight.

Ingredients
- 1 pound Shrimp peeled and deveined
- salt
- ground black pepper Optional if AIP
- 1/2 cup extra virgin olive oil Ghee is a good substitute if you are only lactose free. Dairy free butter is also a good substitute.
- 2-3 shallots finely diced
- 4-6 garlic cloves minced
- Pinch red pepper flakes Optional if AIP or nightshade free
- 1/2 cup dry white wine Chicken Broth as a non-alcoholic substitute
- 1/4 cup parsley chopped
- Lemon wedges to serve
Instructions
- Season the shrimp with salt and pepper then set aside.
- Heat the olive oil over medium-high heat in a large skillet. Add the shrimp and cook for a few minutes, Transfer the cooked shrimp to a bowl and set aside.
- In the same skillet, add the garlic, shallots and red pepper flakes and cook until the shallots are translucent, about 3-4 minutes. Stir in the wine and cook until reduced by half.
- Add the shrimp back to the pan and mix until cover with the sauce. Season with additional salt and pepper. Sprinkle the chopped parsley over the top. Serve immediately with rice or pasta.
Notes
- Omit black pepper and red pepper flakes if following the core autoimmune protocol.
- Wine is allowed, since the alcohol is cooked off, during the core autoimmune protocol.
- Choose a dry white wine for this recipe. A sweeter wine makes the entire dish quite sweet.
- This recipe is traditionally served with pasta or rice.
- Ghee is a good substitute for olive oil if you are only lactose free. And a store bought dairy free butter is also a good substitute.
- If you’d like to make your own ghee, try this easy recipe.
- Jovial pasta is recommended gluten or grain free pasta.
- If serving this dish with pasta, make sure to reserve 1/2 cup of pasta water to combine with the scampi and pasta. It helps coat the pasta and makes a better sauce.
