Damper Recipe
Description
This Damper Recipe uses self-rising flour combined with salt and warmed milk to create a soft, workable dough. Once gently kneaded into a round and flattened slightly, it is baked in a hot oven until richly golden on the outside. Tapping the base for a hollow sound confirms it is fully cooked.
The resulting bread has a rustic, slightly dense texture with a crisp exterior and tender interior, well suited to be enjoyed warm with butter or sweet condiments like golden syrup or jams. Its mild flavor is a traditional accompaniment in Australian cuisine.
Damper can be stored wrapped in a clean tea towel at room temperature for a day or two or frozen wrapped in plastic wrap for up to six weeks. If milk is unavailable, water may be substituted, though it slightly alters the flavor.
Using plain flour requires adding baking powder to provide leavening. Checking doneness by the hollow tap ensures the bread is baked through without drying. Turning it upside down on a rack to cool prevents sogginess on the bottom crust.
Ingredients
- 3 cups self-rising flour or 3 cups plain/all purpose flour and 1 ½ tablespoons baking powder
- 1 teaspoon salt
- 1 ¼ cups milk
Instructions
- Pre-heat oven to 200 degrees celsius (fan-forced).
- Sift flour and salt into a large bowl. (OR whisk with a fork if you don't have a sifter)
- Warm milk and then add to bowl. Mix with a butter knife until mixture sticks together. If there are still dry crumbly bits in the bottom of the bowl add another 1-2 tablespoons of warm milk until mixture holds together.
- Turn dough onto a floured surface and knead very gently into a round.
- Place round onto a greased and floured baking tray. Flatten gently until round is about 13-14cm in diameter.
- Bake on bottom shelf of oven for 25 minutes or until a rich golden colour.
- Remove from oven and turn damper upside down on a wire rack to cool.
- Check the damper is cooked properly by tapping on the base. It should sound hollow. If not, return to the oven for another 5 minutes.
Notes
- Wrap damper in a clean tea towel for 1-2 days or freeze in food wrap for up to 6 weeks to preserve freshness.
- Serve warm or cooled with butter, golden syrup, jams, marmalades, or Vegemite.
- If no milk is available, water can be used as a substitute though the flavor will be milder.
- When using plain flour, add baking powder to self-rise the dough properly.
- To check if the damper is cooked, tap the base for a hollow sound; if not, bake 5 more minutes.
