Dark Chocolate Dipped Apricots

This recipe features dried Turkish apricots dipped halfway in melted dark or semi-sweet chocolate, optionally mixed with coconut oil for a smooth finish. The apricots provide a soft, chewy base contrasted by the firm, glossy chocolate coating. Chilling the dipped fruit sets the chocolate, resulting in a sweet, rich snack or dessert with a balance of fruity and chocolate flavors.

Description

Dark Chocolate Dipped Apricots begin with soft Turkish dried apricots that are partially submerged into melted dark or semi-sweet chocolate combined with optional coconut oil to improve fluidity and sheen. The dipping process coats them halfway, giving a pleasant mixture of chocolate and fruit with each bite.

The chocolate is melted carefully in short bursts, preventing overheating that could cause the chocolate to seize. Once dipped, the apricots are placed on parchment and chilled to harden the chocolate layer, adding textural contrast to the chewy apricot.

This treat can be chilled or served at room temperature and stored in the refrigerator. It makes a straightforward, elegant snack, holiday treat, or dessert component.

If desired, other dried fruits such as figs and pears can be dipped using the same process. Soft, pliable dried fruit works best to ensure easy dipping and pleasant texture. Serving a bowl of warm melted chocolate allows guests to dip their own fruit as a fondue alternative.

Ingredients

Servings
  • 24 apricots Turkish
  • 11 ounce chocolate chips dark or semi sweet
  • 1 tsp coconut oil optional

Instructions

  1. Line a baking sheet with parchment paper.
  2. Put the chocolate and coconut oil, if using, in a microwave safe bowl and cook on high for one minute. Let sit for another minute, and then stir. Put the chocolate back in for more 15 second bursts until the chocolate is completely melted and silky. Don't over-heat or the chocolate may 'seize' up into a solid mass. Let the heat in the bowl do the final melting, while you stir.
  3. Dip each apricot half-way into the chocolate and set on the parchment paper. Put the tray in the refrigerator to harden the chocolate.
  4. You can store the dipped apricots in the refrigerator, or at room temperature.

Notes

  • Choose soft, pliable dried fruits like figs or pears for dipping to achieve best texture.
  • Serve melted chocolate in a bowl with thin bamboo skewers for a fondue-style sharing experience.
  • Fresh fruit slices such as banana, orange, apple, and pear can also be dipped using this method.
