Dark Chocolate Oatmeal Lace Cookies

Dark Chocolate Oatmeal Lace Cookies are delicate, thin cookies combining old-fashioned oats with a lightly spiced, cinnamon-scented batter. Once baked, the lace-like cookies are sandwiched with a thin layer of melted dark chocolate, blending the toasty oat texture with smooth, bittersweet chocolate in each bite. These cookies offer a crisp, lightly chewy texture that makes them an elegant treat.

Description

These Dark Chocolate Oatmeal Lace Cookies use a batter of sifted flour, oats, sugar, cinnamon, and baking powder mixed with melted butter, milk, honey, and vanilla extract for flavor and moisture. The dough spreads thinly on the baking sheet and bakes quickly at 375°F until golden with a crisp edge and tender center.

After cooling, each cookie is spread with a thin coating of melted dark chocolate and sandwiched with another cookie. This delicate layering showcases the oatmeal’s subtle graininess complemented by bittersweet chocolate melding with cinnamon notes. The cookies are lightweight yet satisfy a chocolate craving with contrasting textures.

They are suitable for serving alongside tea or coffee, given their thin, lace-like crispness. The recipe’s controlled use of chocolate ensures the chocolate doesn’t overwhelm the oat and spice flavors but balances them.

Ingredients

Servings
  • 1/2 cup all-purpose flour sifted
  • 1/2 cup granulated sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp baking powder
  • Pinch salt
  • 1/2 cup old-fashioned oats
  • 1/4 cup butter melted, unsalted
  • 2 tbsp milk 1% fat
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 2 oz dark chocolate (melted (calculated with 1 oz only))

Instructions

  1. Preheat oven to 375°F. Line two baking sheets with Silpats or parchment paper; set aside.
  2. In a medium bowl, combine the flour, sugar, cinnamon, baking powder, salt, and oats; set aside.
  3. In the bowl of a stand mixer, combine melted butter, milk, honey, and vanilla. Mix until smooth. Slowly add in the dry ingredients and mix to combine.
  4. Drop 1 level teaspoon of batter onto prepared baking sheets leaving space in between, placing only 12 cookies on each sheet because the cookies will spread in the oven.
  5. Bake for 7-9 minutes. Remove from oven and let cookies cool on baking sheets for 2 minutes. Carefully transfer cookies to a wire rack and cool completely.
  6. Spread one cookie with a thin layer of melted chocolate and sandwich with another cookie on top. Repeat with remaining cookies. You will only use about 1 oz of chocolate, I calculated accordingly.
