Dark Chocolate Peanut Butter Crunch Bars (dairy-free)

These Dark Chocolate Peanut Butter Crunch Bars are dairy-free treats combining coconut oil, peanut butter, maple syrup, cacao powder, and crispy rice cereal. The mixture is heated gently to melt and combine ingredients, then spread and chilled until firm. The bars have a rich dark chocolate peanut butter flavor with crunchy texture from the rice cereal and optional sea salt for contrast.

Description

The bars are made by melting coconut oil with peanut butter and maple syrup over very low heat to avoid burning. Cacao powder is whisked in to provide a smooth, intense chocolate flavor, then crispy rice cereal is folded in to add crunch. Spreading the mixture evenly in a pan allows the bars to set firmly after freezing.

The texture is crunchy from the crisped rice cereal and creamy from the smooth peanut butter and chocolate. The optional sea salt sprinkled before freezing adds a savory note that balances the deep chocolate and sweet flavors.

The bars are best enjoyed chilled because they hold their shape well when cold, though they may become softer at room temperature. They are a convenient, no-bake snack suitable for those avoiding dairy.

Using crispy rice cereal rather than puffed rice maintains a crunchy bite. Avoid overheating the mixture to prevent peanut butter separation or burning. Adding a bit of dairy-free chocolate chips is optional for sweetness variation.

Ingredients

Servings
  • cup coconut oil measured solid
  • ½ cup cacao powder
  • cup peanut butter natural
  • ¼ cup maple syrup
  • 1 tbs maple syrup
  • 2 cup crispy rice cereal
  • ½ teaspoon salt optional, sea salt

Instructions

  1. In a medium pot combine the coconut oil, syrup, and peanut butter. Heat over extremely low heat until coconut oil is melted. Whiskhisk until everything is combined.
  2. Stir in the cacao powder and mix until no clumps remain and chocolate is smooth.
  3. Pour the rice puffs into the pot and mix until they're all coated.
  4. Line an 8x4 pan with parchment paper and pour the mixture into the pan. Use a silicone spatula to smooth the mixture until even. Sprinkle the sea salt over top if using.
  5. Freeze for thirty minutes. Remove from the freezer and let sit for three minutes before cutting.
  6. Enjoy slightly chilled!

Notes

  • Use crispy rice cereal instead of puffed rice for a crunchy texture.
  • Heat the coconut oil mixture gently to prevent burning the peanut butter.
  • Both amounts of maple syrup are necessary to achieve proper sweetness and consistency.
  • Sprinkle sea salt before freezing to enhance flavor contrast.
  • The bars hold best when chilled; they soften at room temperature and may not keep their shape.
  • For a sweeter chocolate flavor, substitute cacao powder with cocoa powder or add dairy-free chocolate chips.
