Description

This recipe starts by melting unsalted butter with a portion of the chocolate chips to form a smooth base. Separately, eggs and pitted Medjool dates are blended until mostly smooth with small visible bits about sesame seed size. This mixture is combined with the chocolate butter and vanilla extract.

A dry mix of sifted all-purpose flour, cocoa powder, and salt is folded in gently, followed by the remaining chocolate chips to introduce texture. The batter is then transferred to a parchment-lined pan and evenly spread before baking at 350°F.

The result is a chocolate-rich brownie sweetened naturally by dates, offering a chewy yet tender bite with occasional melted chocolate bursts from the chips. The use of Medjool dates provides moisture and caramel-like undertones, distinguishing these brownies from traditional recipes.

  • 1 tick butter unsalted
  • 1 ½ cup chocolate chips divided, no sugar added
  • 4 egg at room temperature
  • 16 Medjool dates pitted (about ¾ pound)
  • 1 teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • ¼ cup cocoa powder
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350˚F and line an 8 by 8-inch baking pan with parchment paper so there is an overhang on all four sides.
  2. Add butter and 1 cup of chocolate chips to a large microwave safe bowl. Melt in the microwave using 30 second intervals until butter and chocolate is melted. Whisk until smooth, and let cool slightly.
  3. In a high speed blender combine eggs and dates and process until smooth, about 1 minute. There should only be small bits of date visual, about the size of sesame seeds. Any larger pieces should be mixed until broken down.
  4. Pour the egg and date mixture into the melted chocolate and whisk for about 1 minute, or until well combined, then whisk in the vanilla extract. In a separate small bowl, sift flour, cocoa powder and salt together. Add flour to the chocolate mixture and fold gently with a rubber spatula until no streaks of flour remain. Fold in the remaining chocolate chips. Scrape the batter into the prepared pan and smooth into an even layer.
  5. Bake until the top looks set, but the middle is still fudgy, 20-25 minutes. Let cool for about 30 minutes before slicing into 16 equal pieces.
