Ingredients
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 tbsp butter melted
- 1/2 tsp vanilla
- 1/4 cup pecan chopped
- 1/2 cup dates chopped
For brown sugar sauce
- 3/4 cup brown sugar
- 2/3 cup water
- 1/4 cup heavy cream or light cream
- 1 tbsp butter
- 1/4 tsp nutmeg
Instructions
- Preheat the oven to 350˚F. Grease 1 qt baking pan.
- For brown sugar sauce; combine brown sugar, water, cream, butter, vanilla extract, and nutmeg in a small sauce pan. Bring to a boil and simmer until sugar melt; about 1 minute. Pour the hot syrup in a prepared pan.
- For date dumplings; whisk together the flour, 1/2 cup brown sugar, baking powder, salt in a mixing bowl. Add milk, melted butter, vanilla and chopped pecan and dates; mix well.
- Using a 1-1/2 inch cookie scoop or a spoon drop dumplings, about 12 balls, on the syrup in a pan. Bake in the preheated oven for 30 minutes until syrup gets bubbly and thicken slightly.
- Serve warm with vanilla ice cream or whipped cream.
