Date Snickers Recipe

The Date Snickers Recipe creates a no-bake layered treat featuring pitted Medjool dates pressed into a base, topped with creamy peanut butter, melted chocolate, chopped peanuts, and an optional sprinkle of kosher salt. This dessert delivers a chewy, creamy, and crunchy texture combination reminiscent of a Snickers bar but with whole food ingredients.

Description

Starting by aligning the pitted dates into a compact rectangle and pressing them flat provides a sticky and sweet foundation. An even layer of natural creamy peanut butter is spread over the dates, then covered with melted chocolate chips that harden to form a smooth, rich coating. Chopped peanuts add crunch and nutty flavor on top, while sprinkling kosher salt enhances balance and complexity. Variations can use milk or dark chocolate and different nuts to adjust sweetness and texture according to preference.

Ingredients

Servings
  • 20 Medjool dates pitted
  • 3/4 cup semisweet chocolate chips or milk chocolate chips
  • 2/3 cup peanut butter stirred, natural creamy
  • ½ cup peanuts coarsely chopped
  • ¼ tsp kosher salt optional

Instructions

  1. Line a baking sheet with parchment paper. Pit the dates and open them so the sticky centers are facing up. Arrange the dates side by side on the parchment paper to form a rough rectangle shape. Cover with a second sheet of parchment paper and use a rolling pin or the back of a cup to press the dates into an even layer, ensuring all spaces are filled.
  2. Remove the top layer of parchment paper and spread the peanut butter evenly over the dates. An offset spatula is helpful for achieving an even layer.
  3. In a microwave-safe bowl, heat the chocolate according to the package instructions until melted. Stir the chocolate every 30 seconds; it usually takes 60 to 90 seconds to fully melt.
  4. Drizzle the melted chocolate over the peanut butter, then use a spoon or offset spatula to spread it into an even layer over the peanut butter.
  5. While the chocolate is still soft, sprinkle the chopped peanuts on top and gently press them into the chocolate. If using, sprinkle on the kosher salt.
  6. Refrigerate the bar uncovered until the chocolate is firm, about 1 hour. Alternatively, you can freeze it for 30 minutes. Once the bark is set, use a knife to cut it into Snickers-sized bars.

Notes

  • Milk chocolate chips offer a sweeter, more traditional Snickers-like flavor, while dark chocolate provides a richer taste.
  • Experiment with nuts like cashews, pistachios, or sliced almonds to vary texture and flavor.
  • Add sweet toppings like caramel sauce or toasted coconut flakes for an enhanced dessert experience.
  • Sprinkling coarse sea salt or salt flakes atop balances sweetness with savory notes.
