  • 1 cup dark chocolate vegan, chunks or chips
  • cup coconut butter
  • 1 tbsp maple syrup
  • coconut flakes optional, for decorating

Instructions

  1. Heat 1 cup of chocolate in the microwave.
  2. When ready, add a tablespoon or so of the melted chocolate to the bottom of the mini cupcake wrappers.
  3. To Make the coconut center, simply add maple syrup to the coconut butter and mix until well-combined.
  4. Spoon a layer of the coconut mixture over the chocolate.
  5. Add another tablespoon or so of chocolate over the coconut layer.
  6. Repeat until you have run out of chocolate and coconut filling.
  7. Top the cups with shredded coconut.
  8. When ready, place the cups into the refrigerator for 1-2 hours just until they have set.
  9. Enjoy with company!

Notes

  • For a sugar-free version, omit the maple syrup and use sugar-free dark chocolate.
  • Use dairy-free chocolate chips to keep the cups fully vegan and dairy-free.
