  • 2 lb. ground beef I used 96/4
  • 1.5 cups rice cooked, 225g
  • 2.5 cups salsa chunky, 600g
  • 4 oz. green chiles canned, chopped
  • 3/4 cup corn frozen, 127g
  • 1/2 cup black beans drained & rinsed, cooked, 72g
  • 2-3 Tbsp cilantro chopped, fresh
  • 1 tsp chili powder
  • 1/2 tsp salt
  • 1/2 tsp cumin
  • 1/2 tsp onion powder
  • 1 cup cheese shredded, 112g

Instructions

  1. Preheat the oven to 375 degrees F. Spray a baking dish with nonstick cooking spray.
  2. Brown the ground beef in a large skillet over medium-high heat. Season with salt and pepper to taste and cook until no longer pink, breaking into crumbles as you go.
  3. To the prepared baking dish, add the cooked rice, cooked beef, salsa, green chiles, corn, black beans, cilantro, seasonings and 1/2 cup shredded cheese. Spread mixture into the prepared baking dish. Top with remaining 1/2 cup shredded cheese.
  4. Bake uncovered until bubbly and cheese is melted, about 15 minutes. Top with more cilantro, sour cream (or Greek yogurt) & whatever else sounds yummy and enjoy!

Notes

  • Substitute cauliflower rice to reduce carbs while maintaining protein and fat content.
