Ingredients
- 2 lb. ground beef I used 96/4
- 1.5 cups rice cooked, 225g
- 2.5 cups salsa chunky, 600g
- 4 oz. green chiles canned, chopped
- 3/4 cup corn frozen, 127g
- 1/2 cup black beans drained & rinsed, cooked, 72g
- 2-3 Tbsp cilantro chopped, fresh
- 1 tsp chili powder
- 1/2 tsp salt
- 1/2 tsp cumin
- 1/2 tsp onion powder
- 1 cup cheese shredded, 112g
Instructions
- Preheat the oven to 375 degrees F. Spray a baking dish with nonstick cooking spray.
- Brown the ground beef in a large skillet over medium-high heat. Season with salt and pepper to taste and cook until no longer pink, breaking into crumbles as you go.
- To the prepared baking dish, add the cooked rice, cooked beef, salsa, green chiles, corn, black beans, cilantro, seasonings and 1/2 cup shredded cheese. Spread mixture into the prepared baking dish. Top with remaining 1/2 cup shredded cheese.
- Bake uncovered until bubbly and cheese is melted, about 15 minutes. Top with more cilantro, sour cream (or Greek yogurt) & whatever else sounds yummy and enjoy!
Notes
- Substitute cauliflower rice to reduce carbs while maintaining protein and fat content.
- Serve with tortilla chips or homemade baked chips for scooping the casserole.
