Depression Cake
Description
Depression Cake recipe combines all-purpose flour, sugar, cocoa powder, salt, and baking soda in a bowl. Wet ingredients including vanilla extract, vinegar, vegetable oil, and water are mixed separately and then combined with the dry mixture to form a batter. The vinegar activates the baking soda, helping the cake rise without eggs.
The batter is baked in a greased 8x8-inch pan at 350°F for 30-35 minutes until a toothpick inserted comes out clean. After cooling, a frosting is prepared by mixing melted butter with cocoa powder, powdered sugar, milk, and vanilla. The frosting is spread over the cooled cake to add moisture and chocolate flavor.
This cake offers a straightforward approach to chocolate cake suitable when eggs or dairy are unavailable. It has a soft crumb and modest sweetness, making it a practical and comforting dessert.
Leftover cake can be stored covered in the refrigerator for up to five days to maintain freshness.
