Description
Desi Chai is prepared by boiling water with crushed green cardamom pods and a cinnamon stick to release their flavors. Black tea bags steep in this spicy water to extract a robust tea base. Adding milk and sugar completes the chai, which is gently simmered again to meld the spices into the brew. Using whole spices such as cardamom and cinnamon provides a subtle aroma and a slightly sweet, spiced flavor that complements the richness of the milk.
The tea has a balanced blend of sweetness and spice, with floral notes from cardamom and a warm undertone from cinnamon. This chai pairs well with traditional snacks like paratha and onion pakora, making it a popular choice for teatime in many households. Adjusting the sugar level allows personalization of sweetness.
The use of whole spices rather than ground ones enables straining before serving, leaving a smooth tea. Whole milk is preferred for a creamier texture, but semi-skimmed or plant-based milks like almond or oat can be substituted. Ingredients
- 800 ml water
- 3 tea in bags
- 1 tbsp sugar
- 5 green cardamom Elachi
- 300 ml milk
- 2- inch cinnamon Dalchini
Instructions
- In a large saucepan pour the water in and bring to a gentle boil
- Once the water has come to a boil split the green cardamom pods in half and add to the water along with the cinnamon sticks and boil for a few minutes until fragrant
- Add the tea bags then allow to gently simmer on medium heat for 3-4 minutes
- Pour in the milk and bring it to a gentle boil – better to use whole fat milk but can be substituted with semi skimmed milk or for a vegan alternative almond and oat milk works well
- Add in the sugar and gently simmer for 4-5 minutes – amount of sugar added can be adjusted to suit personal preference
- Serve alongside homemade paratha and onion pakora for a desi teatime treat and enjoy!
