Dill Carrots Recipe
Description
The Dill Carrots recipe starts by peeling and slicing carrots into quarter-inch thick rounds, then tossing them with olive oil and a blend of garlic powder, onion powder, salt, and black pepper before roasting at a high temperature. This cooking method softens the carrots and enhances their natural sweetness while adding subtle savory notes from the spices.
While the carrots roast for about 30 minutes, a fresh lemon dill dressing is whisked together combining olive oil, lemon juice, honey, Dijon mustard, and chopped dill. The dressing adds brightness and a mild sweetness balanced by the fragrant herb.
Once the carrots are tender and slightly caramelized, the dressing is poured over them and mixed well to coat evenly. Optionally, crumbled feta cheese can be added provides a creamy, salty contrast that complements the carrots and dressing. This dish is served immediately, showcasing fresh and vibrant flavors as a colorful side dish suitable for many meals.
