Instructions

  1. Preheat your oven to 400ºF/200ºC.
  2. Cut the potatoes in half or quarters (if they're large), place them in a mixing bowl with the olive oil, and toss them to coat.
  3. Transfer the potatoes to a roasting tin, ensuring they are in a single layer.
  4. Roast the potatoes for 45-55 minutes until golden and crispy.
  5. As soon as the potatoes come out of the oven, toss them with the dill seasoning mix and serve. (see note 3)

Notes

  • Use medium-starch potatoes like Yukon Gold or Desiree for the best texture.
  • Dill seasoning can be purchased or homemade for fresh flavor.
  • Toss potatoes with dill seasoning immediately after roasting to help it adhere to the hot oil coating.
