Ditalini with Peas and Parmesan
Description
This dish begins by cooking diced onions in butter and olive oil until translucent with browned edges, adding a mild sweetness and depth of flavor. The ditalini pasta is boiled in well-salted water to al dente texture. Frozen peas are added near the end of cooking, softening slightly in the same seasoned water to keep everything flavorful.
After draining, the pasta and peas are combined with the sautéed onions, then Parmesan cheese is folded in, coating the ingredients and adding a savory finish. The result is a warm, comforting dish with textured pasta, lightly crisped onions, sweet peas, and a creamy cheese coating.
Best served immediately with extra Parmesan and cracked black pepper to taste, this recipe is straightforward and lends itself to wholesome weeknight meals or as a complement to roasted or grilled proteins.
Ingredients
- ½ pound ditalini pasta
- 4 quarts water
- sea salt a generous amount
- 1 cup peas frozen
- 1 cup onion diced
- 2 tbsp butter
- 2 tbsp olive oil
- 1 cup Parmesan Cheese
Instructions
- In a large heated skillet, add the olive oil and the butter. Once the butter is melted, add the diced onion, salt, and pepper. Cook until the onions are translucent and brown around the edges. When ready set aside. Now we will boil the pasta.
- Bring a large pot of salted water to a rolling boil. Add the pasta and cook until al dente (about 10 minutes).
- Right before the noodles have finished cooking, add the frozen peas in with the pasta. Cook in the same seasoned water for about two minutes.
- When ready, drain the pasta and peas. Transfer the pasta and peas in with the onions. Toss and mix to combine.
- Add the parmesan cheese and mix.
- Serve right away with extra cheese and cracked black pepper on top.
- Enjoy!
Notes
- Serve the dish fresh to enjoy the best texture of pasta and peas.
- Store leftovers in an airtight container in the refrigerator for up to three days.
