DIY Instant Vanilla Pudding Mix

DIY Instant Vanilla Pudding Mix combines sugar, cornstarch, nonfat dry milk powder, and salt with vanilla bean seeds for a homemade base that transforms with milk into a smooth pudding. Using whole vanilla beans gives a natural vanilla flavor and speckled appearance. The dry mix is stored with the scraped bean pods to enhance aroma and can be cooked into pudding on the stovetop till thickened.

Description

This DIY instant pudding mix starts by whisking granulated sugar, cornstarch, dry milk powder, and kosher salt together for a smooth, dry blend. Vanilla beans are split and scraped to release seeds, which are incorporated for natural flavor and visible vanilla specks. The empty pods are cut into pieces and stored with the mix to infuse additional vanilla aroma during storage.

To prepare pudding, the mix is combined with milk in a saucepan and heated while whisking until it boils and thickens to coat the back of a spoon, typically in 3 to 5 minutes. After cooling briefly, this results in creamy vanilla pudding with fresh vanilla flavor. Leftovers can be stored tightly to maintain freshness.

Ingredients

Servings
  • 1 cup granulated sugar
  • ¾ cup cornstarch
  • ¾ cup nonfat dry milk powder
  • 1 teaspoon kosher salt
  • 2 Vanilla Beans whole

Instructions

  1. In a medium bowl, whisk together the sugar, cornstarch, milk powder, and salt; set aside.
  2. Split open the vanilla beans and use the back of a knife to scrape out the seeds. Add the seeds to the sugar mixture, and again whisk well to evenly combine, using a fork or the back of the spoon to break up any chunks of vanilla bean seeds. Cut the empty vanilla bean pods into two or three pieces each.
  3. Place the vanilla bean pieces into an airtight container or jar, and add the sugar mixture. Seal it, and then give it a few good shakes to distribute the vanilla bean pieces evenly. Store in a cool, dry place.
  4. To make pudding: Combine 2 cups of milk with ½ cup of the instant pudding mix in a medium saucepan over high heat, whisking constantly. Bring to a boil, and then immediately reduce the heat to a simmer and continue whisking until the mixture thickens and coats the back of a spoon (about 3 to 5 minutes). Let sit for at least 5 minutes before serving. Store leftovers in an airtight container in the refrigerator.
