Ingredients

Servings
  • 4 cups chicken cooked, diced
  • 1 (10.5 ounce) condensed cream of chicken soup or sub with a can of condensed cheddar cheese soup, can
  • 1 (10 ounce) diced tomato drained (such as Ro-Tel or Red Gold brand, can
  • 1 (10 ounce) green chili pepper drained (such as Ro-Tel or Red Gold brand, can
  • 1 (8.75 ounce) corn drained, canned
  • ¼ cup sour cream
  • 2 tablespoons taco seasoning
  • 1-2 cups cheddar cheese or Colby Jack cheese, cheddar Jack cheese, Pepper Jack cheese, or Monterey Jack cheese, grated
  • 1 (9.25 ounce) tortilla chips coarsely crushed, Nacho Cheese flavored

Instructions

  1. Preheat the oven to 350°F. Spread half of the crushed chips in the bottom of a 2-quart baking dish.
  2. In a large bowl, stir together the chicken, condensed soup, tomatoes and green chilies, corn, sour cream, and taco seasoning. Spread the chicken mixture on top of the chips in the dish.
  3. Sprinkle the cheese over top. Cover the dish. Bake for 20 minutes.
  4. Remove the cover, sprinkle the remaining crushed Doritos over top, and return the dish to the oven (uncovered) for 5-7 more minutes, or until the casserole is hot and bubbly.

Notes

  • Crock Pot Method: I prefer the oven for a crispy topping, but you can also layer the ingredients in your slow cooker if that’s easier. You will need to cook the casserole on LOW for about 3-4 hours or on HIGH for 1-2 hours, just until everything is heated through and bubbly. Add the final Doritos on top just before serving (you don’t want to add them too soon or they’ll get soggy).
