Description
Double Chocolate Black Bean Brownies use black beans pureed with eggs, coconut sugar, cocoa powder, avocado oil, and leavening agents to create a thick batter. Ingredients

- 3 Tbsp avocado oil
- 2 tsp baking powder
- 1/4 tsp salt sea salt
- 1 tsp vanilla extract pure
- 1/2 tsp ground cinnamon optional
- 1 cup dark chocolate chips
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Lightly oil an 8" x 8" baking pan, and line the pan with parchment paper.
- Drain and rinse the chickpeas (or black beans). Add them to a blender along with the rest of the ingredients, except for the chocolate chips. Blend well until a thick, smooth batter results.
- Stir the chocolate chips into the batter.
- Transfer the batter to the prepared baking dish and spread into an even layer. Bake on the center rack of the preheated oven for 24 to 28 minutes, until the center of the brownies have set up. Note: The center of the brownies will not test clean when poked with a tooth pick - this is normal.
- Remove brownies from the oven and allow them to rest 1 hour before cutting and serving.
Notes
- Drain and rinse black beans thoroughly before using to avoid any canned taste.
- Coconut sugar can be substituted with regular cane sugar if preferred or if unavailable.
- Olive oil or melted coconut oil may be used instead of avocado oil depending on availability or flavor preferences.
