Double Chocolate Black Bean Brownies

These Double Chocolate Black Bean Brownies blend black beans and cocoa powder into a rich, fudgy batter. The beans add moisture and texture, while dark chocolate chips intensify the chocolate flavor. They bake into dense, chewy brownies with a deep chocolate taste and a subtle spice from cinnamon.

Description

Double Chocolate Black Bean Brownies use black beans pureed with eggs, coconut sugar, cocoa powder, avocado oil, and leavening agents to create a thick batter. The beans provide a moist base and added protein while allowing the cocoa and chocolate chips to shine. Baking powder and other rising agents give structure, while vanilla and cinnamon add warm notes.

After blending the ingredients and folding in chocolate chips, the batter is spread in a lined baking dish and baked at 350°F for about 24 to 28 minutes. The brownies set with a dense, almost fudgy texture typical of bean-based brownies. The center remains moist and may not appear fully clean when tested with a toothpick, which is considered normal.

These brownies offer a unique way to incorporate beans into baked goods, improving moisture and nutritional content without compromising chocolate flavor. They can be served as a treat or dessert to enjoy a chocolate fix with added fiber.

Ingredients

Servings
  • 1 (14-oz) can black beans drained and rinsed (see note
  • 2 large egg
  • 2/3 cup coconut sugar (see note)**
  • 1/3 cup cocoa powder unsweetened
  • 3 Tbsp avocado oil
  • 2 tsp baking powder
  • 1/4 tsp salt sea salt
  • 1 tsp vanilla extract pure
  • 1/2 tsp ground cinnamon optional
  • 1 cup dark chocolate chips

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Lightly oil an 8" x 8" baking pan, and line the pan with parchment paper.
  2. Drain and rinse the chickpeas (or black beans). Add them to a blender along with the rest of the ingredients, except for the chocolate chips. Blend well until a thick, smooth batter results.
  3. Stir the chocolate chips into the batter.
  4. Transfer the batter to the prepared baking dish and spread into an even layer. Bake on the center rack of the preheated oven for 24 to 28 minutes, until the center of the brownies have set up. Note: The center of the brownies will not test clean when poked with a tooth pick - this is normal.
  5. Remove brownies from the oven and allow them to rest 1 hour before cutting and serving.

Notes

  • Drain and rinse black beans thoroughly before using to avoid any canned taste.
  • Coconut sugar can be substituted with regular cane sugar if preferred or if unavailable.
  • Olive oil or melted coconut oil may be used instead of avocado oil depending on availability or flavor preferences.
