Ingredients

Servings

Chocolate French Toasts:

  • 3 large egg
  • ½ cup almond milk or milk of choice, unsweetened
  • 2 tablespoons cocoa powder I use Hershey's, unsweetened
  • 1 tablespoon sugar or natural granulated sweetener, of choice
  • 6 lices bread I use sourdough, thick

Chocolate Cherry Cheesecake

  • 6 tablespoons cream cheese low fat/fat free
  • 2 tablespoons Greek yogurt vanilla or plain, low fat
  • 1 tablespoon cocoa powder
  • 1 tablespoon natural sweetener or sugar of choice
  • 14.5 oz cherries sub with fresh cherries if you wish, canned, pitted, in natural juice or syrup

Chocolate Maple Syrup

  • ½ cup maple syrup
  • 1 tablespoon cocoa powder

Instructions

French Toasts:

  1. Whisk eggs, milk, cocoa powder and sweetener/sugar until combined well and free from lumps. Add bread (one at a time) and thoroughly soak through. Spray a good quality nonstick pan or skillet with cooking oil spray, and fry bread on low - medium heat until cooked on both sides (about 4-5 minutes each side). Repeat with remaining slices.
  2. While toasts are frying, prepare Chocolate Cherry Cheesecake and Chocolate Maple Syrup...

Chocolate Cherry Cheesecake:

  1. In a medium-sized bowl, add the cream cheese, yoghurt, cocoa powder and sweetener/sugar, and mix until smooth. Fold the cherries through and mix again.

Chocolate Maple Syrup:

  1. Combine maple syrup and cocoa powder in a jug, and whisk really well until combined.

Now Stack!

  1. Stack french toasts with cheesecake filling and top with syrup.

Notes

  • I used thick, chunky sourdough bread for these toasts, which allowed for 6 slices for the quantity of chocolate egg wash (and 3 serves) BUT if using thinner normal sandwich bread slices, the egg wash could easily allow for 8 slices and serve 4.
