Double Chocolate Chip Cookies for Christmas

Double Chocolate Chip Cookies for Christmas combine melted butter, brown and white sugars, cocoa and espresso powders for a rich chocolate dough studded with semi-sweet chocolate chips and festive red and green M&M candies. The cookies bake to a tender and slightly soft texture with deep chocolate notes enhanced by the espresso powder, ideal for holiday gatherings.

Description

This cookie recipe uses melted butter and a mix of sugars to create a moist dough tinted with cocoa and a hint of espresso powder, which deepens the chocolate flavor subtly without being overpowering. Once the dry ingredients are mixed in, chocolate chips and colorful M&M candies are added to provide texture and festive appeal. The dough is portioned into large balls and baked just long enough for the edges to set while the center remains tender, softening further while cooling on the baking sheet. This method yields cookies that are chewy with a rich chocolate taste and a touch of vanilla's warmth. The cookies keep well stored in an airtight container and can be enjoyed for days after baking.

Ingredients

Servings
  • 8 tablespoons butter melted
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/3 cup cocoa powder
  • 1 teaspoon espresso powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips semi-sweet
  • 1/2 cup M&M candies red and green

Instructions

  1. Preheat oven to 350.
  2. Add the butter and sugars to the bowl of a stand mixer and beat until well combined with the paddle attachment.
  3. Beat in the egg and vanilla until well combined.
  4. Add the flour, cocoa powder, espresso powder, baking soda, and salt to the mix and stir until a soft dough forms.
  5. Stir in the chocolate chips and candies by hand.
  6. Portion dough into 9 large balls and place on a large parchment lined baking sheet.
  7. Bake for 11 minutes exactly. Cookies will look underdone, but will continue to set up while cooling.
  8. Cool on baking sheet for 5 minutes before transferring to a cooling rack. Cool before serving.
  9. Store in an air-tight container.

Notes

  • Espresso powder is optional but enhances the chocolate flavor without imparting coffee taste.
  • Do not overbake; cookies look slightly underdone when removed but will firm up while cooling.
  • Store baked cookies in an airtight container to maintain freshness.
