  • 2 cup flour
  • 2/3 cup cocoa powder
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup chocolate chips
  • 3/4 cup buttermilk
  • 2 egg
  • 1 teaspoon vanilla
  • 1/2 cup canola oil or vegetable oil
  • sugar topping, coarse

Instructions

  1. Preheat the oven to 350, and grease muffins tins with cooking spray.
  2. Mix the dry ingredients - flour, cocoa powder, sugar, baking powder, baking soda, salt, chocolate chips - in one bowl and stir to mix together well.
  3. Mix the wet ingredients - buttermilk, eggs, vanilla, cooking oil - in another bowl and stir to break up the eggs and combine all the liquids.
  4. Add the wet ingredients to the dry ingredients all at once, and stir until just mixed. Don't worry if there are a few lumps of flour.
  5. Spoon the batter into muffin tins and sprinkle with coarse sugar.
  6. Bake for 20-25 minutes, until a toothpick inserted in the muffin comes out clean.
  7. Cool on wire racks.
