Ingredients

Servings
  • 150 g self-raising flour
  • 60 g light brown sugar or caster sugar
  • 4 tbsp cocoa powder
  • ¼ tsp baking powder
  • ¼ tsp ground cinnamon
  • ¼ tsp salt
  • 160 ml whole milk
  • 1 egg large
  • 2 tbsp butter melted, unsalted
  • 1 tsp vanilla extract
  • grapeseed oil or a mix of oil and butter, to fry
  • icing sugar optional, to dust

Chocolate sauce (optional)

  • 100 ml whipping cream
  • 80 g dark chocolate chips
  • milk as needed, if sauce needs thinning, warm
  • 1 tbsp cocoa powder
  • 1-2 tbsp honey or golden syrup

Serving Suggestions

  • Fruit like bananas or berries
  • maple syrup to drizzle

Instructions

Make the chocolate sauce

  1. Make the chocolate sauce. Put the chocolate in a bowl. Heat the whipping cream, cocoa powder and honey until bubbles form around the edge of the pot.
  2. Pour over the chocolate and then stir until smooth. If the sauce is a little too thick for pouring, you can thin it by stirring in a little warm milk. Set aside - you might need to warm in a microwave for few seconds before using.

Make the pancakes

  1. Sift the flour, sugar, cocoa powder, baking powder, cinnamon and salt into a large bowl.
  2. Mix the egg and milk in a measuring jug and add to the bowl. Mix together with a balloon whisk.
  3. Stir in the melted butter until the pancake mix smooth and glossy.
  4. Heat a tablespoon of grapeseed oil in a large, non-stick pan.
  5. Lower the heat to medium and add a heaped tablespoon of batter per pancake. Spread with the back of a spoon so that each pancake is smooth and even.
  6. Cook for 2-3 minutes, until bubbles start to form on the surface. Carefully flip and cook for a couple more minutes.
  7. Continue until you use all the batter, adding a little more oil between pancake batches.
  8. Drizzle the pancakes with maple syrup or chocolate sauce and serve with fresh fruit and nuts or your choice of toppings.
