Dulce de batata is a popular jelly-like Paraguayan candy made with puréed sweet potatoes. It is a simple and irresistible sweet that can be served as an aperitif, a snack or like some natives do, even as a breakfast.

Ingredients
- 3 lb sweet potatoes
- 4 cups sugar
- 1 tablespoon Glucose syrup (or corn syrup)
- 1 tablespoon agar-agar
- 2½ cups water
- 1 tablespoon vanilla essence

Instructions
- Cook the sweet potatoes with their skin in a large pot with boiling water for 20 to 30 minutes.
- Once cooked, drain and peel.
- Mash the sweet potatoes and add the sugar and glucose syrup. Mix vigorously.
- Cook over low heat, stirring constantly with a wooden spoon, until the preparation detaches from the bottom of the pot.
- Dissolve the agar-agar in cold water, add it to the mashed potatoes and cook for another few minutes, stirring constantly until reaching a temperature of 220 F / 105 C.
- Add the vanilla essence and remove from heat. Pour into a pan or casserole dish lined with parchment paper.
- Store in the refrigerator for at least 2 hours before serving.
