Dump-and-Bake Chicken Sausage, Apple and Sweet Potato Casserole
Description
The Dump-and-Bake Chicken Sausage, Apple and Sweet Potato Casserole combines peeled and cubed sweet potatoes with peeled, cored, and chopped apples and sliced onion. Fully cooked chicken sausage sliced into rounds is mixed in for protein and added flavor. The ingredients are tossed in olive oil mixed with a savory herb and garlic dry soup mix that acts as seasoning and sauce coating.
The mixture is spread in a baking dish, covered with foil, and baked at 400°F for 35 to 40 minutes until the potatoes are soft and cooked through. The casserole offers a mix of tender sweet potato and apple cubes with savory sausage and slightly softened onions, providing a balance of sweet and savory notes in one dish.
This casserole suits casual family-style meals and requires minimal preparation, as the ingredients are simply tossed and baked without prior sautéing. It is adaptable to different fully cooked sausage varieties, allowing customization of flavor profiles.
The recipe can be adjusted for fewer servings by halving the ingredients and using a smaller baking dish. Options like kielbasa sausage may substitute well depending on taste preferences.
Ingredients
- 2 sweet potato about 1 lb; peeled and cut into 1-inch cubes
- 2 apple peeled, cored and cut into 1-inch cubes
- 1 onion sliced
- 12 ounces chicken sausage fully cooked, sliced into rounds, example: Aidells Chicken & Apple Smoked Chicken Sausage
- 2 tablespoons olive oil
- 1 dry soup mix Savory Herb with Garlic, envelope size 1.25 ounces
Instructions
- Preheat oven to 400 degrees F.
- Spray a large baking dish (about 9 x 13 inches) with cooking spray.
- In the prepared dish (or in a separate bowl), toss together potatoes, apples, onion, and sausage. In a separate small bowl, whisk together olive oil and dry soup mix. Pour sauce over potato mixture and toss to coat.
- Transfer to baking dish; cover with foil, and bake for 35-40 minutes, or until potatoes are tender.
Notes
- Halve the recipe and use an 8-inch square dish to make a smaller portion suitable for two people.
- Any fully cooked sausage can be used; choose your preferred brand and flavor.
- Kielbasa sausage makes a good alternative to chicken sausage in this casserole.
