  • 2 cups chicken broth
  • 2 cups broccoli cut into bite-sized pieces, fresh florets
  • ½ cup onion or about ½ of a small fresh onion, diced, frozen, diced
  • 4 tablespoons butter sliced into 7 or 8 chunks
  • 4 pork chop about 6 ounces each, thick-cut, boneless
  • ¼ cup Parmesan Cheese grated
  • ½ cup mozzarella cheese shredded

Instructions

  1. Preheat oven to 350F (180).
  2. Spray an 8- or 9-inch square baking dish with cooking spray. Place uncooked rice in the prepared dish.
  3. Add broth and seasoning packet, whisking until combined. Stir in broccoli florets and diced onion.
  4. Place butter on rice. Add pork chops on top, season with salt and pepper, to taste.
  5. Cover dish tightly with foil.
  6. Bake for 1 hour, or until rice is tender and pork is cooked through. Fluff the rice with a fork.
  7. Switch oven to BROIL on high.
  8. Sprinkle top of pork chops with Parmesan and add shredded mozzarella over all. Place casserole under the broiler (uncovered) for about 3-5 minutes, or until cheese is melted and golden brown on top.
