Ingredients

Servings
  • 2 tbsp olive oil
  • 4 pounds pork shoulder or pork butt, boneless
  • 2 tbsp paprika
  • 1 tbsp garlic powder
  • 1 tsp thyme dried
  • 1 tbsp cumin
  • 2 tsp onion powder
  • 1 tsp salt sea salt
  • 1 tsp black pepper
  • 1 yellow onion sliced, small
  • 3 tbsp apple cider vinegar
  • 2 cups beef broth
  • cup BBQ sauce

Instructions

  1. First, preheat oven to 300 degrees Fahrenheit.
  2. Heat olive oil in a Dutch oven over medium heat on the stovetop.
  3. Slice the pork shoulder into 5 smaller pieces. Combine all of the spices in a small bowl. Rub each piece of pork all over with the spice mix.
  4. Once the oil is hot, place pieces of pork into the Dutch oven. Sear on each side for 2 minutes. Then, remove to a plate.
  5. Turn the heat down to low. Add in sliced onions. Cook for 4 to 5 minutes, until softened and fragrant.
  6. Then, add the seared pork, apple cider vinegar, and broth to the Dutch oven. Place lid on top.
  7. Place in the preheated oven. Bake, covered, for 3 to 3 ½ hours.
  8. Once the pork is very tender, remove the Dutch oven from the oven.
  9. Remove all but ¼ cup of the liquid in the pot. Use two forks to shred the meat.
  10. Finally, stir in BBQ sauce. Serve!

Notes

  • A boneless Boston pork shoulder or pork butt is best for this recipe.
  • Choose a piece of meat with some fat on it.  This adds flavor!
  • Be generous with the seasoning.
  • The pork is done roasting when it easily falls apart.
  • Store leftovers in the fridge for up to 5 days.
  • This Sugar-Free BBQ Sauce is real food healthy!
