Dynamite Roll Recipe

Ingredients

Sushi Rice

  • 1 cup sushi rice or 2 cups cooked
  • 2 tablespoons rice vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon vegetable oil

Dynamite Roll

  • ½ Mango sliced into matchsticks
  • ½ cucumber sliced into matchsticks
  • 1 avocado sliced
  • 2 Nori seaweed sheets
  • 4 tempura shrimp

Dynamite Sauce

  • ½ cup mayo or equivalent
  • 1 tablespoon Sriracha hot sauce
  • ¼ teaspoon toasted sesame oil

For Serving - Optional

  • sesame seeds
  • 1 tablespoon soy sauce
  • Wasabi paste
  • pickled ginger

Instructions

Cook Sushi Rice

  1. Using a sieve, rinse the sushi rice several times in cold water to remove excess starch. Then soak for about 30 minutes.
  2. In a small saucepan, add 1 ¼ cups water per 1 cup of rice and bring to the boil. Reduce heat to low and cover the pot. Leave the rice to cook for 1 hour, or until fluffy. (If you have one, a rice cooker is ideal for this.) l
  3. In a small bowl, mix rice vinegar, sugar and vegetable oil together. Add this to your cooked rice and stir to coat the rice. Season to taste.

Make the Sushi Roll

  1. Cover a bamboo mat with plastic wrap. Place a nori (seaweed) sheet on top and spread the rice over the sheet in a thin layer.
  2. Flip the sheet over (so the rice side faces down). Add mango, cucumber, avocado and tempura shrimp along one side. Take care not to overdo the fillings as this will make it difficult to roll.
  3. Using the bamboo mat to help you, carefully fold the roll over, squeezing it gently each time until you have a long cylindrical shape. Dip a sharp knife in water and use it to cut the roll into segments and then into bite-size pieces.

Make Dynamite Sauce

  1. In a small bowl, combine the ingredients for the dynamite sauce.
  2. Drizzle the dynamite sauce over the pieces and sprinkle sesame seeds on top. Serve with Wasabi, pickled ginger and soy sauce.
