Earthquake Cake

Earthquake Cake is a layered dessert constructed by spreading a mixture of coconut flakes and chopped pecans on the bottom of a baking pan, topping it with an unbaked chocolate cake batter, and then dolloping a cream cheese-based mixture on top. The cream cheese layer features softened cream cheese, butter, powdered sugar, and vanilla extract. Baking the assembled ingredients results in a dense, moist cake with a rich, creamy topping and a crunchy coconut-pecan base. The distinctive texture and layering give the cake its name.

Description

The Earthquake Cake combines sweetened coconut flakes and chopped pecans spread in a greased 9x13-inch pan, serving as a crunchy base layer. A prepared chocolate cake mix batter is poured directly over this nut and coconut bottom without pre-baking. Dollops of a cream cheese mixture made with softened cream cheese, softened butter, powdered sugar, and vanilla extract are placed on top in spoonfuls.

As the cake bakes at 350°F for approximately 45 to 50 minutes, the layers meld and create varied textures: a crunchy nut and coconut crust, a moist chocolate cake layer with a fudgy consistency, and pockets of tangy, sweet cream cheese topping. This contrast in textures and the swirled appearance after baking are visually reminiscent of an "earthquake," hence the name.

The cake is served once cooled and can be sliced into squares. Its rich and sweet profile makes it suitable for dessert occasions or gatherings. The recipe highlights its unique structure and dolloped topping as distinctive elements.

Ingredients

Servings
  • 1 cup sweetened coconut flakes
  • 1 cup pecans chopped
  • 1 box chocolate cake mix prepared according to package directions (but not baked, German style
  • 8 ounces cream cheese
  • 1 tick butter softened, or margarine
  • 1 pound powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F and grease the bottom of 9x13-inch pan. Do not grease the sides.
  2. Mix the coconut and pecans and spread the mixture in the bottom of the pan.
  3. Pour the prepared cake mix over the coconut and pecans.
  4. Cream together the remaining ingredients and spoon the mixture in dollops over the cake batter.
  5. Bake for 45 to 50 minutes.

Notes

  • Spread the coconut and pecans evenly on the greased pan to create a crisp base layer.
  • Dollop the cream cheese mixture over the cake batter without spreading for a marbled effect.
  • Bake at 350°F without pre-baking the cake mix for the proper layered texture.
  • The name "Earthquake Cake" comes from the cracked and swirled appearance after baking.
