Easter Basket Cookies Recipe

This recipe creates peanut butter cookie cups with a soft, tender texture molded in muffin tins. Each cookie cup is filled with smooth, colored buttercream frosting and topped with peanut butter M&Ms for a festive look. The dough combines both granulated and brown sugar with creamy peanut butter and shortening, giving the cookies a rich and balanced sweetness. They bake up with slightly risen, set edges and hollow centers perfect for holding the frosting. These cookie cups present a creative way to enjoy peanut butter cookies with a decorative finish suitable for celebrations.

Description

The Easter Basket Cookies Recipe starts with a peanut butter cookie dough mixed from sugars, shortening, peanut butter, eggs, and vanilla. Flour and baking soda are folded in to form a manageable dough that is portioned into greased muffin tins. An indent is pressed into the dough to create a cup shape that will hold the frosting. The cookie cups bake at 350°F for 10 to 12 minutes until risen but set, then cool completely. The frosting combines butter, powdered sugar, milk, vanilla, and food coloring to create a smooth, creamy consistency that is piped into each cookie cup and topped with peanut butter M&Ms for color and crunch.

The peanut butter base offers a familiar and nostalgic flavor while the buttercream filling adds a sweet, soft contrast. This cookie presentation provides a handheld treat that is visually appealing and ideal for springtime and Easter-themed gatherings or gift-giving. The recipe’s method allows shaping without special molds besides the muffin tin and makes an inviting treat with festive decoration potential.
