Description
The Easter Cereal Bars start by melting butter gently and then incorporating mini marshmallows until smooth and melted. Removing the pan from heat, Funfetti baking chips are stirred in to add extra sweetness and color. Crisp rice cereal is folded into this mixture, coating each piece evenly. The mixture is then transferred to a greased baking dish and pressed firmly, forming a dense, chewy base.
To complete the bars, rainbow sprinkles and Cadbury Mini Eggs are sprinkled on top before the mixture cools and sets fully, taking about an hour. Once firm, the slab is cut into fifteen bars, each offering a balance of soft marshmallow chew, crunchy cereal, and bursts of chocolate and sweetness from the chips and eggs.
This recipe requires minimal equipment and no baking, making it accessible for any home kitchen. Using a metal spatula or wax paper to press the mixture helps achieve an even surface. Preparing ingredients beforehand is advised to work efficiently while the marshmallows are melted.
Ingredients
- 1/4 cup butter
- 1 package mini marshmallows
- 12 ounce cereal 1 box of Rice Chex or Rice Krispies
- 9 ounce baking chips 1 package, Funfetti brand
- 2 cups Cadbury Mini Eggs mini
- Rainbow sprinkles
Instructions
- Spray a 9 x 13 inch baking dish with cooking spray. Set it aside.
- Place the butter in a large saucepan and cook over medium-low heat, stirring occasionally.
- When the butter is melted, add the marshmallows and stir to combine and let the marshmallows met.
- Once they are melted stir in the Funfetti chips and take the pan off the heat.
- Add the cereal to the pan and stir until all the pieces are coated.
- Transfer the mixture to the prepared baking dish and press it firmly into the pan. Use a metal spatula or wax paper.
- Add the rainbow sprinkles and chocolate eggs on top. Then allow it to cool completely, for about 1 hour.
- Cut into 15 bars and serve.
Notes
- Use a large saucepan for melting butter and marshmallows to prevent overflow.
- Measure and prepare all ingredients before starting, as the marshmallows set quickly once melted.
- Press the mixture firmly into the pan using a metal spatula or wax paper for an even, compact texture.
