Ingredients

Servings
  • 45 Oreo cookies
  • 2 ½ cups milk cold
  • 3.4 oz Instant pudding mix cheesecake or white chocolate flavor
  • 8 oz whipped topping thawed, tub
  • Gel food coloring of your choice
  • 3 cups coconut shredded
  • Green Gel Food Coloring
  • 10 marshmallows Peeps chick or bunny shape
  • 30 Cadbury Mini Eggs mini

Instructions

  1. Add the Oreo cookies to a food processor and pulse until the cookies are a fine crumb. Set the Oreos aside for later.
  2. Add the milk and pudding mix together in a large bowl and whisk together. Place in the fridge and let it set for about five minutes then stir again. The mixture should have thickened and be ready for the next step!
  3. Gently fold the Cool Whip into the thickened pudding mixture.
  4. Divide the pudding mixture into two separate bowls. In one bowl, add two to three drops of the gel food dye of your choice. Repeat in the second bowl but with a different color. Fold the food coloring into the pudding mixture, gently until the pudding turns your desired color.
  5. Put the shredded coconut into a zipper top bag and then add two to three drops of green food coloring. Zip up the bag and shake the bag until the coconut is evenly covered in the green food coloring.
  6. Add two tablespoons of the processed Oreo crumbs into the bottom of each of your 10 cups. Then add two tablespoons of one color of pudding on top. Add another two tablespoons of Oreo crumbs, then another two tablespoons of the other color of pudding. Finish with one final layer of Oreo crumbs.
  7. Top each cup with about one tablespoon of the green coconut shreds just until the the top is covered. Add one bunny Peep or chick marshmallow and some mini Cadbury eggs on top of the green coconuts.
  8. Serve immediately or store in the refrigerator until you're ready to serve.

Notes

  • Use light-colored pudding. As mentioned above, plan to use a light or white pudding in your Easter dirt pudding cups if you’re going to add any color. White chocolate or coconut are other options.
  • Don’t like coconut? Use green sprinkles for the grass instead of colored coconut shreds. You can also use swirls of green icing if you’d prefer – I just like the grass look of the shredded coconut!
  • Not using any food coloring? You can decide to still use a white pudding or use a chocolate pudding layer instead if you want more chocolate flavor!
