Easy 10-min. Garlic Chili Oil Noodles

These garlic chili oil noodles feature tender wheat noodles tossed with a savory mix of garlic, red chili flakes, soy sauces, vinegar, and sesame seeds. A hot vegetable oil poured over minced garlic and chili flakes gently cooks and releases their flavors, infusing the noodles with an aromatic, mildly spicy finish. The noodles remain tender and coated in a balanced sauce that combines umami, heat, acidity, and a subtle sweetness. This recipe can use various wheat noodles like taiwanese sliced noodles, udon, or ramen.

Description

The recipe calls for boiling wheat noodles until just al dente, then draining and placing them in a bowl. A combination of regular and dark soy sauce, Chinese black vinegar, minced garlic, red chili flakes, chicken bouillon powder, granulated sugar, green onions, and sesame seeds is added to the noodles. Separately, vegetable oil is heated until smoking and then carefully poured over the garlic, chili flakes, and green onions in the noodle bowl. This step gently cooks these aromatics, releasing their flavors and aroma into the oil, which then coats the noodles. The noodles are mixed well with chopsticks or tweezers to combine the sauce evenly.

The resulting dish has a harmonious blend of spicy heat from chili flakes, savoriness from soy sauces and bouillon, acid tang from vinegar, and nutty notes from sesame seeds. The noodles are soft and coated with the flavorful oil mixture, making for a satisfying and quick meal or snack component. This simple method allows the aromatics to infuse the oil without additional frying.

This noodle dish can be served warm right after mixing, and garnished with extra green onions or sesame seeds if desired. It is a versatile side or light main with its balanced flavor profile and quick preparation.
