Easy 20-min. Dan Dan Noodles

Easy 20-min. Dan Dan Noodles feature fresh wheat noodles topped with seasoned ground pork and a flavorful sauce combining sesame paste, soy, chili oil, and spices. The warm noodles absorb the sauce while reserved cooking water adjusts the sauce's consistency. The dish balances spicy, savory, and nutty flavors alongside a tender, saucy texture, making it a quick and satisfying meal.

Description

In this recipe, fresh wheat noodles are cooked until al dente and combined with a sauce made from sesame paste, chili oil, soy sauces, black vinegar, garlic, Sichuan peppercorn powder, and a touch of sugar and bouillon powder. The sauce is seasoned to provide a rich and slightly spicy profile, characteristic of Dan Dan noodles.

Ground pork is marinated with soy sauce, Chinese five spice, Shaoxing wine, sugar, and pepper before being browned until crispy and crumbly, adding a savory and textured element to the dish. The reserved noodle cooking water is stirred into the bowl to loosen the sauce and help it coat the noodles evenly.

The assembled noodles, sauce, and crispy pork are garnished with chopped green onions for a fresh contrast. This dish works as a quick main course that combines bold flavors with varied textures.
