Easy 5-min. Spicy Ramen Stir-Fry

This spicy ramen stir-fry uses instant ramen noodles cooked briefly, then tossed in a sauce combining gochujang, gochugaru, garlic, mirin, sesame oil, soy sauce, and honey. The sauce coats the noodles lightly, resulting in a noodle dish with savory, sweet, and spicy Korean-inspired flavors, and a pleasant balance of textures from tender noodles with a glossy sauce.

Description

The recipe begins by preparing a quick sauce from Korean chili paste (gochujang), chili flakes (gochugaru), garlic, mirin, sesame oil, soy sauce, and honey for sweetness. Instant ramen noodles are boiled just 2 minutes to maintain slight chewiness, then drained reserving a little noodle water to help meld the sauce. The sauce is warmed gently on low heat, and the drained noodles tossed in with the reserved water to create a light, even coating without clumping or drying out. The dish is removed from heat quickly to preserve texture and flavor intensity.

This preparation delivers a fast, flavorful noodle dish with moderate heat from gochujang and gochugaru balanced by sesame and sweet notes. It works well as a standalone quick meal or a flavorful side to other dishes.
