Easy 5 Minute Microwave Fudge
Description
The recipe starts by melting chocolate chips in a microwave-safe bowl in increments, stirring frequently to avoid overheating. Sweetened condensed milk is mixed in to add sweetness and a creamy texture, followed by small pieces of cold butter melted briefly in the microwave until smooth. Vanilla extract is incorporated for flavor. The mixture is then poured into a buttered loaf pan, covered, and chilled for at least two hours to solidify before cutting into squares.
The resulting fudge is rich and smooth, with a balanced sweetness from condensed milk and deep chocolate flavor. The microwave method requires careful attention to prevent seizing, where chocolate becomes dry or crumbly. The cold butter helps stabilize texture and adds richness. When cut, pieces have clean edges if the knife is heated and wiped between cuts.
This fudge can be stored at room temperature for a few days or frozen for extended storage. Freezing in portioned pieces allows convenient thawing one at a time. The ease and speed of preparation make this fudge suitable for last-minute gifts or treats.
Ingredients
- 12 ounces chocolate chips about two cups, semi-sweet
- 14 ounces sweetened condensed milk recommend Eagle Brand
- 2 tablespoons butter cold
- 2 teaspoons vanilla extract
Instructions
- Butter a 9x5-inch loaf pan and set it aside.
- Using a microwave-safe bowl, microwave the chocolate chips on high for one minute. Stir, then microwave again for 30 seconds. Continue microwaving in 10 second increments until chips are almost completely melted.Be sure to check and stir the chocolate frequently. The chips will hold their shape and appear to be not melt until stirred. Stop microwaving when the chips are about 90% melted. They'll finish melting from the residual heat.
- Remove from the microwave and add the condensed milk. Stir until incorporated into the chocolate.
- Cut the butter into small pieces and put it on top of the chocolate mixture in the bowl.
- Return the bowl to the microwave for another 30-45 seconds until the butter is melted. Stir well.
- Add the vanilla and stir until smooth.
- Pour into the prepared loaf pan. Cover the pan with plastic wrap.
- Chill for at least 2 hours.
- Use a sharp knife to cut the fudge into squares and serve.
Notes
- Avoid overheating the chocolate during microwaving to prevent a dry, crumbly texture known as seizing; stir frequently while melting.
- Heat and clean the knife between cuts to achieve neat, even fudge squares.
- Store fudge at room temperature in a sealed container for up to four days.
- Fudge may be frozen in airtight containers for up to four weeks; cutting into serving sizes before freezing is recommended.
