Easy Air Fryer Chicken Taquitos (20 Minute)
Description
The recipe starts by blending softened cream cheese, plain Greek yogurt, taco seasoning, and chopped green onions, then folding in cooked shredded chicken and shredded Mexican cheese. Tortillas are softened by microwaving under a damp towel for pliability before being filled with 2-3 tablespoons of the chicken mixture and rolled tightly.
The assembled taquitos are cooked in a preheated air fryer at 400°F, sprayed with cooking oil for crispness, and air fried first on one side then flipped to crisp evenly. The cooking duration is about 6-7 minutes total, resulting in crisp, golden-taquitos with a melting, creamy filling.
Serving these taquitos with salsa, guacamole, or sour cream complements their creamy, savory filling and crispy texture. They work well as appetizers, snacks, or light meals.
For dietary modifications, certified gluten-free tortillas or dairy-free cheese and yogurt alternatives can be used. Ingredients
- 10 corn tortilla 6-inch, or flour tortillas
- 2- oz. cream cheese softened, lite, 60g
- 1/4 cup Greek yogurt plain, nonfat, 60g
- 1 Tbsp taco seasoning
- 2 green onions chopped
- 2 cups chicken breast rotisserie, canned, etc, cooked and shredded, 230g
- 1/2 cup Mexican cheese shredded, 56g
- cooking spray
- salsa for serving, chunky
Instructions
- In a small bowl, combine the cream cheese, greek yogurt, taco seasoning and chopped onion. Fold in the chicken and shredded cheese. Add any salt and pepper to taste.
- Place the tortillas on a plate and cover with a damp paper towel and microwave for 30 seconds.
- Scoop 2-3 Tbsp of the chicken mixture onto one side of the tortilla and roll it up tight. Repeat for all the tortillas.
- Preheat the air fryer to 400 degrees F. Once heated, spray the air fryer basket with cooking spray and place the taquitos seam-side down with space in between them (so they crisp up all over). Spray cooking spray all over the top and air fry for 5 minutes. Then, flip the taquitos over, spray with cooking spray again and air fry for another 1-2 minutes.
- Let cool for a few minutes before serving. Serve with guacamole, sour cream (or greek yogurt), salsa, etc. and enjoy!
Notes
- Use certified gluten-free tortillas to make this recipe gluten-free.
- Substitute dairy-free cream cheese, yogurt, and cheese to make the taquitos dairy-free.
- To freeze, cool taquitos, freeze individually on parchment to prevent sticking, then transfer to freezer-safe bags; store up to 3 months.
- Reheat refrigerated taquitos in the air fryer at 400°F for 2–3 minutes; frozen taquitos need 5–8 minutes. Oven reheating takes 10–15 minutes.
